This delicate, unique pink bourbon from Rina Aguilera of Finca La Wipa represents our very first Colombian pink bourbon release of the year, and we are so glad that it has finally landed, and that we can now share it with you. While this coffee does present with definite, stable citric acidity, reminding us of juicy, red blood orange, it is more tame and nuanced than we have come to expect from pink bourbon lots—which typically present with much more punchy, sharp, and sometimes even sour citrus flavors. First and foremost, we picked up on its beautiful, tropical, passion fruit quality, which is then tempered by perfumed violet and bright yet refined blood orange.
Ms. Aguilera works alongside her son and grandson on Finca La Wipa, which is located at 1.740 masl in Tolima. The farm is four hectares in size, with one hectare dedicated to the cultivation of pink bourbon trees, and the remainder to dairy farming—which is the family’s primary livelihood. Because of the miniscule size of their coffee cultivation, and their focus solely on pink bourbon, the extremely high quality of this lot is made possible through careful, closely monitored cultivation and processing.
Pink bourbon is a relatively uncommon variety, first identified relatively recently, in 2013, and grown almost exclusively in Colombia. Pink bourbon is known for its potential for quality, generally represented by pleasant, citric acidity, honeyed sweetness, and strong floral presence in the cup — all qualities present in this offering. Its genetic heritage remains uncertain, although it is most likely not actually bourbon at all, being instead yet another example of an Ethiopian landrace variety that made its way to Colombia, just like chiroso, geisha, mejorada, papayo, sidra, aji and wush wush. This would certainly make sense, given that the flavor of pink bourbon is much more akin to a washed Ethiopian landrace or Panamanian geisha in its florality, than a more typical Colombian bourbon or castillo. The sugar present in pink bourbon, like red bourbon, is predominantly glucose, resulting in a more smooth, silk-like body.
All coffee is sold whole-bean to reduce oxidation, and increase the longevity of volatile organic compounds.
